- 2 lbs butternut squash, diced
- 1 eggplant, diced
- 1 lb lean beef, cubed, or chicken breast, cubed
- 1 green pepper, finely chopped
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 tsp cayenne
- 1/2 tsp ground coriander
- 2 tbsp olive oil
- salt
- pepper
Serve over rice to non-diet family.
